Cooking is a spiritual experience, a meditative experience, it is an
opportunity to transcend the ingredients and work with the uniqueness of our existence and
the existence of the earth and cosmos.
In order to honor the above the Indian kitchen is designed to be in the
south east corner of the house. This is called the fire corner where the good energy of
the sun prevails.
The kitchen is divided into 2 areas ~ one is for preparation and cooking
and the other for cook ware and storage. All cleaning of used dishes is done outside the
kitchen.
The cook knows the principles of Ayurveda and yoga and the nature of food
according to its Doshas, tastes and its properties and qualities. The cook knows the
Doshas, lifestyle, health levels and ages of the people that she/he cooks for. There
exists a feeling of love and nurturing in the cook.
