flvorful blend consisting of star anise, fennel seeds, cloves, cinnamon and Szechuan
peppercorns.

Chinese Pepper or Szechuan peppercorns are strong, slightly numbing and fragrant musty
peppercorns.
Star Anise is a beautiful star shaped spice which is aromatic and strong spice.
Dried tangerine peel adds citrus aroma and taste to
rice, meat and stews. Soak for 20 minutes in warm water before use. |
Soy Sauce
This is a multi use sauce used for flavouring or as a condiment or dip. Lite ght soy sauce
has less salt. Dark soy sauce imparts a rich colour and meaty taste to food and is used
for Chinese red- cooking for dark stews and meats. Use with Ajika Chinese Five Spice
Yellow bean paste or sauce
Available in jars is used instead of soy sauce when a thicker sauce is required.
Black bean paste or sauce

Salted black beans or Douchi
Soak for 5-10 minutes before use. They are then usually mashed into the cooking oil or
sauce over high heat. |
Chilli sauce
A hot-tasting sauce made from red chilli. Greatly used in Szechuan.
Oyster sauce
A thickish brown sauce made from soy sauce and oysters. Used mostly in the south Chinese
cuisines.
Sesame paste
Used in bothe Middle Eastern and Chinese cuisines and adds rich, nutty and aromatic taste
to dishes.
Sesame oil
Widely used for its nutty, deep aromatic flavour. It will keep almost indefinitely.
Chilli oil
The oil is made by frying small red chillies slowly in oil. |
