Palak Paneer - In Punjab the spinach season is awaited by both adults and
children. Once you taste this dish you may eagerly wait for your next trip to your
store if you haven't stocked up on this dish. The Spinach is cooked with Indian
cheese called paneer and flavored with tomatoes, onions and spices.
Accompaniment - They
are traditionally served with any flatbread, French baguette or with rice. A side
dish of yogurt raita (raita recipe given below) and a side salad of Kuchumber (recipe
given below) accompany this dish.
Serving Suggestions for Home - At home I serve Palak
Paneer (which is the favorite along with Kofta Curry of my children and their friends) by
combining it with a package of frozen spinach. This also allows me to stretch a box
of Palak Paneer to serve my family of four.
Heat a pan. Add half cup water and put the frozen entree in it.
Then,
1. Add a package of frozen or fresh spinach to Palak Paneer curry entree. Heat the
dish until the dish is heated through and is bubbling.
Serving Suggestions for Entertaining - An all time
favorite with guests that love Indian food.
Combine 2 packages to serve 6 when serving with other dishes.
Combine 3 packages to serve 6 for larger servings. Serve with side dishes of steamed
vegetables, roasted golden potatoes and raita (raita recipe given below) and chutneys,
flat breads and rice pilaf.

Raita (Yogurt Salad)
Ingredients
1 cup fresh curds
1 cup chopped cucumber
1 chopped green chili
1 tablespoon maple syrup
salt to taste
Method
Mix the above ingredients well and serve with rice.

Kachumber
(Salad)
Ingredients
1 onion diced fine
1 pomegranate juicy seeds
4 carrots peeled and grated
Juice of 1 lime
salt and chili pepper to taste

Mix the above ingredients well and serve with rice.
