This is my most favorite book. It is actually a document, encyclopedia or A to Z
book of traditional Indian cuisine which evolved over time in Indian homes. The
amount of effort put into this book is extraordinary. It is for the serious Indian
cook who is interested in India's regional home cooking. Since it covers Indian
vegetarian cooking it lacks the moghlai cooking which is popular in North Indian
restaurants - the meat dishes and dishes cooked with onion and garlic. The recipes
are very authentic and are a testament to simple ingredients producing sublime tastes. The

it is not surprising that that this and the above cook books are vegetarian. Chandra
gives an excellent introduction to South Indian She has many Sambhar recipes, rice recipes
and dessert recipes which are wonderful and easy to make - again simple ingredients are
cooked up into sublime tastes. The recipes are authentic South Indian recipes simple and
well laid out. The pictures in themselves are a gastronomical treat and make me want to
