Lord Krishna's Cuisine : The Art of Indian Vegetarian Cooking

This is my most favorite book. It is actually a document, encyclopedia or A to Z book of traditional Indian cuisine which evolved over time in Indian homes.  The amount of effort put into this book is extraordinary.   It is for the serious Indian cook who is interested in India's regional home cooking.  Since it covers Indian vegetarian cooking it lacks the moghlai cooking which is popular in North Indian restaurants - the meat dishes and dishes cooked with onion and garlic.  The recipes are very authentic and are a testament to simple ingredients producing sublime tastes. The A To Z reference by Yamuna is also very useful.   Background Info

The Joys of Vegetarian Cooking

The Indian culinary landscape is mainly vegetarian.  But as in every culture the need to eat global is strong.  Tarla Dalal has many Indian recipes in this book but to accomodate this global food yearning she has recipes of many International dishes which she has made vegetarian. Her cookbook reflects the foods cooked in Indian homes and she is loved by most Indian women for making the recipes quick and easy.  Many Indian cook books are aimed for Westerners but this book is created for local consumption - although Westerners who are seeking simple, easy and quick recipes will find her books wonderful.

This too is a vegetarian cook book.  More than half of India is vegetarian so it is not surprising that that this and the above cook books are vegetarian.  Chandra gives an excellent introduction to South Indian She has many Sambhar recipes, rice recipes and dessert recipes which are wonderful and easy to make - again simple ingredients are cooked up into sublime tastes. The recipes are authentic South Indian recipes simple and well laid out. The pictures in themselves are a gastronomical treat and make me want to beam myself into a South Indian celebration in India.
